Mama’s Easy Potato Soup

potatosoupThis recipe is sooo easy that I’m almost embarrassed to post it. It’s not fancy, but the kids love it and it’ll keep you warm on a cold winter’s day! The amount of ingredients are listed PER PERSON, so you can easily adjust this depending on how many you’ll be serving.

Ingredients:

1 large potato, peeled & chopped
1/4 cup onion, finely chopped
1/4 cup celery, finely chopped
1/4 – 1/2 cup milk (depending on how thick you want it)
salt and pepper, to taste
crumbled bacon and cheese (optional)

Put potatoes, onion, and celery in a large pot and fill with water until the water level is just below the top of the vegetables. Bring to a boil, then cover and simmer for 25-30 minutes.

Mash the potatoes to desired consistency then add 3 tablespoons butter (that is 3 T. of butter TOTAL, not per serving) and milk. Salt and pepper to taste. *This will take a LOT of salt, more than likely.*

I usually double the amount we would need for the four of us and throw this in a crockpot so we can enjoy it throughout the day.
