Chicken Tortilla Soup

This is yet another easy soup for the crockpot. If you can open cans and shred some chicken, then you can make this! *You could even use canned chicken, if you’re so inclined.*


o 1 lb shredded cooked chicken
o 1 (15 ounce) can diced tomatoes
o 1 (14.5 ounce) can black beans
o 1 (14.5 ounce) can corn
o 1 (10 ounce) can enchilada or taco sauce
o 1 (4 ounce) can chopped green chili peppers
o 1 medium onions, chopped
o 2 garlic cloves, minced
o 1 (14.5 ounce) can chicken broth
o 1 tablespoon cilantro
o 1 teaspoon chili powder
o 1 teaspoon cumin
o 1/4 teaspoon black pepper
o 1 teaspoon salt
o 1 bay leaf

1. Place all the ingredients in the crockpot and cook on low 6-8 hours high 3-4 hours.
2. Serve with tortilla chips.
